Beluga caviar has an absolutely unmistakable character with its huge, mild grains that range in colour from light to dark grey. Its complex flavour and prolonged aftertaste is classed as the most exclusive gift one can make. These are not just fish roe, but a magical explosion of flavours on the palate.

It is the largest fish of the three and, therefore, its roe are the largest and most expensive. It is also the rarest. It normally weights between 40 and 300 kg. (although it can sometimes be in excess of 1000 kg) and the caviar obtained corresponds to 15% of its weight.
The colour of the caviar varies within the different shades of grey, it has a mild flavour and the lighter its colour, the more sought-after it becomes. The size of the roe ranges between 2.5 and 3.5 mm.
The best quality caviar in the world comes from the countries washed by the waters of the Caspian Sea.
