Beluga caviar is large and mild, a bed of grey that is distinguished by its absolutely unmistakable character. Its complex flavour and prolonged aftertaste class it as one of the best dishes in the world.

It comes from the largest freshwater fish in the world, measuring a maximum of 8 m in length and weighing in excess of one ton. Its caviar corresponds to 15% of its weight and it is known by man as Huso huso, the most sought-after of them all. It is a relatively rare fish, although it makes up half of the world’s caviar consumption. A large-grained caviar measuring between 2.5 and 3 mm, with a mild, deep flavour similar to that of walnuts. The roe is deep gold in colour. The lighter its colour, the more sought-after it becomes. The only difference between this caviar and the Beluga 000 is the fact that the roe are slightly smaller.
